Complex, Persistent, Vertical
The most particular and complex Classic Method, bottled for refermentation for the first time in 2011 and inaugurated after 5 years for the anniversary of the twenty-fifth harvest in 2016. Fresh and vertical, a tribute to Ugo Botti, founder of Tenuta la Vigna.
Grapes: 100% Chardonnay.
Vinification: After a scrupulous qualitative selection of the bunches, the grapes in small crates are taken to the cellar for immediate pressing. The must obtained ferments in steel and wood, at a controlled temperature of 16°C and is refined on "noble lees" throughout the winter. In spring, the blend is carried out with the most acidic bases and a portion of older vintages, bottling and second fermentation; the bottles then remain lying down for a second refinement lasting a minimum of approximately 50 months, in contact with the yeasts. This is followed by the remuage operation on the pupitres, then disgorgement without the addition of sugar in liqueur. Before marketing, the wine is refined in the bottle, in an air-conditioned environment, for approximately 1 year.
Color: the long refinement gives a shiny golden color of excellent intensity; very fine, numerous and persistent effervescence.
Aroma: the olfactory attack is broad and refined, immediately expressing generous and very open tones; lime, bergamot, candied citron, a light toast of salted dried fruit and chopped hazelnuts. Secondly, liquorice root, chinotto and anise emerge with a saline finish.
Mouth: full, flowing, clean and direct wine, with great flavor and freshness; decidedly transversal and tasty, excellent elegance and persistence.
Serving temperature: to be served at 6-9°C in a large glass to appreciate all its complexity.
