The 2021 La Maliosa Rosso wine is obtained from the selection of the best Ciliegiolo grapes, occasionally with the presence of Sangiovese and gray Cannonau. It has an alcohol content of 13.0% and the total sulfur values are less than 10 mg/litre. The vineyards are located between 300 and 330 meters above sea level, aged between 10 and 60 years, with a mix of historic Italian and Maremma vines, raised with the counter-espalier and mixed pruning with a simple or double arch. La Maliosa Rosso is obtained through the CorinoTM Method, an exclusively vegetable closed-cycle regenerative agriculture, with particular commitment to preserving the productive capacity of the soil and the longevity of the plants, with mulching in the sub-row with hay produced on the farm. The harvest was done through a rigorous manual selection of the grapes. During the fermentation, carried out with natural yeasts, only periodic punching down was carried out and the maceration lasted for 4 weeks. Subsequently, the wine was left to evolve in wooden barrels for about 10 months. No oenological interventions or additions of additives were carried out. The 2021 vintage was characterized by a winter with abundant rainfall, a spring with slowly rising temperatures and a frost that mainly affected the sections of the vineyard at higher altitudes. A drought phase began in May with temperatures within the seasonal norms. The total absence of rain was particularly anomalous for the months of August and September, but thanks to the winter rains the grapes were healthy and with optimal ripening, with a slight advance in ripening due to high temperatures.
Tasting notes:
The color is a full and intense, impenetrable ruby red.
The nose is warm and enveloping with the intense aromatic endowment typical of morello cherries, black cherry and plum jam alongside a gentle balsamic note of Mediterranean scrub.
In the mouth it is structured, warm, complex and surprising. The tannin is present and well refined, never too strident.
Examples of food pairings:
We suggest in combination with well-seasoned egg pasta, also with meat sauce, autumn soups with mushrooms and fatty meat trimmings, aged sheep's cheeses also long and with both white and red tasty roast meats. Excellent as an accompaniment to game, even in elaborate recipes and with well-seasoned cured meats.
We recommend airing the wine for a few minutes before tasting it.
