Soft, Large, Delicate
Delicate, ethereal and soft, Rubinera tells every sip the history of its land of origin. Red like passion, intense like a family tradition that began 150 years ago.
Grapes: Sangiovese, Marzemino and Merlot.
Vinification: after a scrupulous qualitative selection of the bunches, the grapes in small crates are taken to the cellar for immediate destemming and crushing. The must and skins remain in contact during fermentation in order to extract color, aromas and structure for an extremely variable duration (from 10 to 30 days and more) depending on the variety and vintage. Fermentation is carried out at a temperature of approximately 25°C; then racking follows.
Subsequently, refinement takes place on "noble lees" for a year and a half before being prepared for bottling. Before marketing, the wine is refined in the bottle, in an air-conditioned environment, for approximately 90 days.
Colour: medium intensity bright ruby red with slight garnet nuances at the edge of the disc.
Aroma: olfactory profile marked by red fruits such as strawberry, raspberry and cherry, hints of blood orange followed by memories of dog rose and peony, ending with a spicy trace.
Mouth: the taste is lively, with freshness reminiscent of pomegranate, well-integrated tannin to balance the taste profile. The sip extends on a savory progression with a pink grapefruit finish. It denotes excellent prospects for evolution.
Serving temperature: to be served at 15-17°C in a fairly large glass.
