Pecorino Riserva Nera is an unmistakable cheese to the eye, smell and above all taste. It is characterized at first sight by its typical cylindrical shape and its black rind, rough to the touch. Inside it has a compact and crumbly white-straw colored paste, it is one of the most famous Sardinian cheeses in Italy and throughout the world. Its fame is due to its aromatic, slightly spicy and strong flavour, typical of its semi-maturing. Just as not all wines can become fine reserves, not all Sardinian pecorino cheeses can afford to become "Riserva Nera", and it is precisely the careful selection of the best raw materials that lies at the basis of the production of this cheese. Pecorino Riserva nera cheese is perfect to be grated thinly to flavor first courses, but it can be consumed simply - and, to feel its taste better, at room temperature - with slices of bread. Also excellent as aperitifs, perhaps combined with Sardinian honey or delicately flavored jams. It goes well with full-bodied red wines, which enhance its flavour. Pecorino Riserva Nera can be stored in the refrigerator, wrapped in a damp cloth, to keep its flavor and consistency intact. Seasoning: from 5 to 8 months
