Spelt is considered the progenitor of all grains, the first traces of cultivation date back to 8000 years BC. : the word "flour", after all, derives from "far", a term with which the Latins designated spelled.
The dough is hazelnut in color and on the palate there is a taste that it is reminiscent of oily fruits.
It is characterized by a high nutritional value thanks to its content of vitamins, mineral salts and proteins; on the other hand, it has a low gluten content which makes the preparations digestible and easily assimilated.
Use: Bread, piadina, savory pies, biscuits and rustic desserts, pure or mixed with other ancient grain flours.
