It is a mixture of two varieties of ancient grains, Gentil Rosso and Ardito , with the addition of a modern wheat, Giorgione - characterized by greater strength (W) - to give elasticity, leavening and softness to the dough.
The Gentilrosso is a very ancient variety, probably originating from the upper Tiber valley, the most widespread in Italy at the beginning of the last century and well known in the Marecchia Valley. The flour obtained is excellent, which gives the bread very pronounced and pleasant aromas.
The Ardito is a variety from the beginning of the last century, obtained from Rieti, much appreciated for its good yields and quality of the flour obtained.
Use: Designed for pizza, it later proved to be extremely versatile, also ideal for the production of piadinas, cassoni and bread.
