BC, in the Middle East. It has a low gluten content (around 7%). The "einkorn" is an excellent candidate for the production of foods with a high nutritional profile, very rustic and excellent from the point of view of adaptability to cultivation techniques with low environmental impact.
Use: Bread, piadina, savory pies, biscuits and rustic desserts, pure or mixed with other ancient grain flours.
