Near Oristano there are numerous rice fields, made flourishing by the hot sun and the fresh, salty air that comes from the sea. Brown Thai rice grows among these rice fields, naturally rich in fiber and very light. This, in particular, is an extremely aromatic variety of Thai whose fragrance is reminiscent of freshly baked bread. This is not the classic white rice: this wholemeal Thai rice is in fact only partially deprived of the external covering, i.e. the husk, the presence of which guarantees the rice a higher and richer content of fibre, mineral salts and vitamins. In addition to these properties, wholemeal Thai rice prevents the risk of colon cancer and is also perfect for kidney health, due to its low protein content. In the kitchen, it is perfect when used to prepare risottos and cold salads. To best preserve the nutritional properties of Sardinian wholemeal Thai rice, it is recommended to cook it by absorption, in a pot or in the oven.
