Magnesium

Magnesium is an intracellular cation, crucial for the membrane potential of muscle and nerve cells. It is present in the body ubiquitously in quantities of approximately 20-28 g: 60% is found in bones, 39% in intracellular compartments and approximately 1% in extracellular fluids. Thanks to its stereochemical properties, the Mg++ ion can reversibly bind to various enzymes of energy metabolism, playing an essential role in numerous cellular functions, including the synthesis of proteins, nucleic acids and energy production.

Magnesium losses occur with feces, urine and sweat.

The bioavailability of Mg varies in the presence of specific dietary components: phytates (e.g. present in cereal bran and legumes), calcium, phosphorus and long-chain fatty acids reduce its absorption. Even cooking foods reduces its bioavailability. On the contrary, it increases in the presence of proteins, fructose, inulin, fructo- and galacto-oligosaccharides.

To maintain the correct balance of the mineral, an adult subject (18-59 years) needs 3/4.5 mg/kg*day. Based on the review of a large number of metabolic balance studies performed under strictly controlled conditions, the average level of intake for which a balanced balance is observed for the adult population was less than 170 mg/day (Hunt and Johnson, 2006).
