The producers of Boar Fillet only use wild boars from the best farms, selecting only their leanest and most valuable cut, i.e. the fillet. Wild boar meat is rich in iron, very lean and low in calories, and the skilful processing according to Sardinian tradition highlights its excellent characteristics. The wild boar fillet is seasoned with salt, pepper and other spices, massaged and dried. Its maturation, which goes from 60 to 150 days, enhances its particular gamey flavor and its intense and very pleasant smell. The wild boar fillet is used above all as a special appetizer, also accompanied by other Sardinian cured meats and cheeses. To present it at its best and enhance its taste, we recommend serving its slices as a second course on a bed of rocket, with a few flakes of Sardinian pecorino and a drop of extra virgin olive oil.
